Ice Cream Maker

The glacier qualification is required for anyone who wants to open an artisanal ice cream shop in France. It applies to professionals who make ice cream, gelato, sorbets, or frozen desserts from scratch.

You must hold a qualifying diploma (CAP glacier fabricant, CAP pâtissier, bac pro boulanger-pâtissier, or equivalent) or prove at least three years of professional experience in the EU/EEA. Registration is done through the Chambre de métiers et de l'artisanat (CMA). EU citizens can also practice under freedom of establishment rules.

Requirements

  • Mandatory professional qualification: CAP in ice cream making, pastry, or chocolate/confectionery, OR professional baccalaureate in bakery-pastry, OR BTM in ice cream making or pastry-confectionery-catering
  • Alternative experience: 3 years of effective professional experience in the EU/EEA as manager, self-employed, or employee
  • Good standing requirements: Not subject to a ban on managing, running, administering, or controlling a commercial or artisanal enterprise; not subject to a professional practice ban (Article 131-6 of the Penal Code)
  • Insurance: Professional liability insurance mandatory for self-employed (optional for employees)

Procedure

  • CAP training: Accessible after middle school, 2-year duration at vocational high school, via apprenticeship, continuing education, professionalization contract, individual application, or VAE (validation of acquired experience)
  • Professional Baccalaureate training: Accessible after middle school, 3-year duration, same modalities as CAP
  • BTM training: Artisanal qualification open to level IV or V diploma holders, 2-year duration, via continuing education, apprenticeship, professionalization contract, individual application, or VAE
  • EU/EEA nationals (LPS): Prior declaration of activity to CMA, possible submission to aptitude test in case of substantial differences
  • EU/EEA nationals (LE): Application for professional qualification recognition certificate to CMA, possible compensation measures (adaptation internship max 3 years or aptitude test)
